There have been a lot of negative reviews of Chopping Block classes.
Even so, I ended up taking a Focus on Sauces cooking class with my fiancee. It covered the classics (bechamel, tomato, beurre blanc, mayonnaise, hollandaise, velouté) and more modern sauces (reduction, foam, oil, sabayon, etc.). It was well run and moved along at a good pace to cover a lot of ground. It was hands-on. Only two sauces were demo'ed, as opposed to the students trying them themselves. Given numbers, we worked in teams of four on the sauces, so everyone did something and got to participate.
There was a lunch break for a light meal using the classic sauces we made in the morning, plus a light snack at the end using the modern sauces we made in the afternoon.
I thought that the offer to buy equipment at a student discount was low-key.
The instructor was Ginna Haravon.
All in all, I would recommend this class.

As far as cooking schools go, I actually preferred the class I took at Sur La Table. Better menu and more organized.

Very poor instruction. My son could've taught the class (he's 13).

Took a class here with my mom the other day. It wasn't a cooking class; it was more like a big advertisement for their retail products (spatulas, pans, etc.) We weren't sold on it and left wishing for a refund.

Sorry, but don't waste your money ($75 a class) on the Chopping Block. My mom and I took a class here and was met by rude front staff, an instructor who obviously didn't study the recipes prior to the class, and not enough food for everyone. Hated it!

I hate to say it, but I didn't really enjoy the class I took here. The instructor was very disorganized and it showed. I can't believe I paid $75 for a mediocre lesson...

My sister and I took a class at the Merchandise Mart location last week. The teacher did a lot of product selling (there's also a retail store), which took away from actual instruction. The food was just ok. The whole experience overall was disappointing.

Took a class here and wasn't impressed by it. There were too many students in the class, so I didn't get a chance to work side-by-side with the instructor. There were a couple assistants to help out, but unfortunately they knew just as much as I did about cooking. I didn't really learn anything new. Cooking at home with family and friends have produced better, more memorable meals and isn't as expensive as taking a class at the Chopping Block.
