Everytime I stay at the Hyatt Regency Chicago I make it a point to eat at Stetson's. The food and service is excellent. In my experiences there, I have never waited longer than 5 minutes to be sat. The steak is exceptional. I would definetly reccommend a visit to Stetson's Chop House the next time your in Chicago.
